Lemongrass Ginger Jelly
We first had chilled lemongrass ginger drinks at Banyan Tree resort eons ago and it was the best thing after a hot day out at the beach. The lobby staff would always have them in exquisite cups ready for us when we arrive back at the hotel.
I tried to replicate that taste in the past but didn’t quite understand what I was doing and failed. Turns out rock sugar makes all the difference!
So now you can enjoy that too…in jelly form!
You’ll get:
1 tub of refreshing lemongrass jelly for young and old
You need:
- A pack of agar-agar powder required for 1000ml water
- 3 stalks of lemongrass
- 40g of ginger, peeled and cut into chunks
- 120g rock sugar
- 1000ml water
- 1 pot
- 1 plastic container or jelly molds
Method:
- Cut the lemongrass into length of about 3 inches.
- Use the back of your knife to knock on the white portions of the lemongrass to open up the fibers so they can release more flavor into the drink.
- Add water, lemongrass and ginger to pot.
- Bring the pot of water to a boil and let it boil for 5 mins before bringing down the heat and let it simmer for 2 hours.
- Remove lemongrass and ginger from the water.
- Add rock sugar. (At this point you can chill it in the fridge and enjoy it as a smoothing drink)
- Add the agar-agar powder gradually while stirring.
- Bring water back to a boil stir for 1 min before pouring the mixture into your molds.
- Chill them in the fridge immediately for 2–3 hours.
- Enjoy your lemongrass jelly in the hot Summer afternoon!
